Cut beetroot, carrots and parsnips into roughly equal sized chunks.
Drizzle with honey and oil and season to taste. Cook in preheated oven for 20 min.
On a separate tray, place the frozen scampi and cook as per instructions for 18min
Served with steamed kale and a dollop of butter.
