Scampi in a Basket

Serves: 1 as a main | Cooking Time: Prep time: 10 minutes. Cook time: 12 minutes.

This modern take on a nostalgic classic; Whitby Wholetail Breaded Scampi served in a bento style box with Furikake fries, smashed wasabi peas and a smooth tartar sauce drizzle.

Method
1. For the tartar sauce drizzle, mix all the ingredients in a small food processor, blitz until smooth. Add a dash of water if the sauce is a little thick, season with salt and black pepper. Transfer to a squeezy bottle.
2. Next, cook the frozen peas as directed on the pack. Drain and return to the pan with the olive oil and lemon zest and juice, heat gently for a couple of minutes. Mash the peas then stir in the wasabi check the seasoning and keep warm.
3. Cook the Whitby Wholetail Breaded Scampi and fries as directed on the pack.
4. When the fries are cooked, drain, and toss in a bowl with Furikake seasoning and sea salt.
5. To assemble pile the fries into a bento style box, top with scampi and wasabi peas. Drizzle over the tartar sauce then garnish with a sprinkling of Furikake seasoning, black onion seeds, spring onions and a couple of lemon wedges.


Tip: This recipe would also work with potato wedges.

Ingredients:

  • 1 x 150g portion of Whitby Seafoods Wholetail Breaded Scampi
  • Tartar Sauce Drizzle (makes 10 portions):
  • 200ml good quality mayonnaise
  • 3 tbsp capers, drained and chopped
  • 50g gherkins, drained and chopped
  • 40g shallot, finely chopped
  • squeeze of lemon juice
  • salt and black pepper
  • Smashed Wasabi Peas:
  • 100g frozen peas
  • 1 tsp olive oil
  • ¼ lemon, zest and juiced
  • ¼ tsp wasabi
  • Furikake fries:
  • 1 portion French fries
  • 1 tsp Furikake seasoning, plus extra to garnish
  • To Serve:
  • 1 tsp black onion seeds
  • ½ spring onion, sliced
  • 1 wedge of lemon
