American style waffles loaded with spiced pea guacamole, tomato and red onion salsa and Whitby Extra Large Wholetail Breaded Scampi. Finish off with a hot honey dressing & lime crema.
Method
1. For the pea guacamole, bring a small saucepan of water to the boil. Add the frozen peas to the pan and cook for 3 minutes. Drain and run under cold water until cool.
2. Put the peas and lime juice into a small food processor and whiz until quite smooth. Add the remaining guacamole ingredients and pulse a couple of times to combine. Season with salt and ground black pepper.
3. Cook the Whitby Seafoods Extra Large Wholetail Breaded Scampi as directed on the pack.
4. Meanwhile, mix all the salsa ingredients in a small bowl and season to taste with sea salt and ground black pepper.
5. For the lime crema, mix the ingredients in a small bowl, season to taste.
6. To assemble, place the waffle on a serving plate and top with the pea guacamole, followed by the salsa, scampi, and a dollop of crema. Finish by drizzling over the hot honey sauce.
Tip
This recipe will also work well on crispy tacos.
