Loaded Scampi Waffle

Serves: 1 as a light main | Cooking Time: Prep time: 15 minutes. Cook time: 7 minutes.

American style waffles loaded with spiced pea guacamole, tomato and red onion salsa and Whitby Extra Large Wholetail Breaded Scampi. Finish off with a hot honey dressing & lime crema.

Method
1. For the pea guacamole, bring a small saucepan of water to the boil. Add the frozen peas to the pan and cook for 3 minutes. Drain and run under cold water until cool. 
2. Put the peas and lime juice into a small food processor and whiz until quite smooth. Add the remaining guacamole ingredients and pulse a couple of times to combine. Season with salt and ground black pepper.
3. Cook the Whitby Seafoods Extra Large Wholetail Breaded Scampi as directed on the pack.
4. Meanwhile, mix all the salsa ingredients in a small bowl and season to taste with sea salt and ground black pepper.
5. For the lime crema, mix the ingredients in a small bowl, season to taste.
6. To assemble, place the waffle on a serving plate and top with the pea guacamole, followed by the salsa, scampi, and a dollop of crema. Finish by drizzling over the hot honey sauce.

Tip
This recipe will also work well on crispy tacos.

Ingredients:

  • 1x 100g portion of Whitby Seafoods Extra Large Wholetail Breaded Scampi
  • Spiced Pea Guacamole:
  • 75g frozen garden peas 
  • ¼ lime, juice only 
  • 1 tbsp soured cream
  • 2g green chilli, very finely chopped 
  • 20g small red onion, very finely chopped
  • Tomato and Red Onion Salsa:
  • 50g vine tomato, deseeded and finely chopped
  • 20g red onion, finely sliced
  • ¼ lime, juice only
  • ½ tbsp fresh coriander, finely chopped
  • Sea salt and ground black pepper
  • Lime crema:
  • 1½ tbsp soured cream
  • ¼ lime zest and juice
  • To serve:
  • 1 large American style waffle, warmed
  • RTU Hot Star Honey Habanero Hot Chilli sauce or similar
