A quick(ish), but incredibly delicious idea!
Preheat oven and cook goujons according to instructions on the back of pack. Meanwhile, scoop out and mash avocado flesh with lemon juice and zest. Spread one half of each flatbread with mashed avocado, place cooked goujons on top and dollop with mayonnaise. Garnish with parsley if desired.
Fold over and tuck in!
