Well it is Spring (whether it feels like it currently or not) and I feel like getting some friends round and celebrating, good and proper.
What better excuse to get the gang round to mine than offer them something new to scoff? (We Seagulls do love our scampi but as they say - variety is the spice of life). I've rustled up a quick and easy started for Saturday evening using the new Calamari Rings
Served with a simple garlicky citrus dipping sauce, and quick to cook it is the ideal nibble to serve if a flock descends unexpectedly.
This version will serve 4 as a starter and 8 for casual nibbles
Ingredients
2 (or more) bags of Whitby Seafoods Breaded Calamari Rings
Sour Cream 150ml
Rind and Juice of 1 lemon
2 garlic cloves crushed
Parsley - chopped
Method
Mix all sauce ingredients together, cover and rest in fridge for at least 30 min
Meanwhile, preheat the oven and baking trays.
Place calamari rings on preheated trays and cook for 10 mins. Turn the rings halfway through the cooking time.
Dive in (beak first!)
